With over 17 years of professional baking experience, Couture Cakes owner, Lia Brigner, has known she’d be a cake artist since middle school. We asked her to give us a little insight into her delicious wedding cake and dessert business.
How long have you been baking cakes?
It’s hard to believe, but I have been working in the Baking & Pastry industry for over 17 years! Knowing that I wanted to one day open my own couture cake boutique, I studied at the renowned Johnson & Wales University, in Rhode Island, where I earned my degrees in both Baking & Pastry Arts and Foodservice Entrepreneurship, as well as double minoring in Leadership, and World Languages.
After graduating with honors as ‘summa cum laude’, I started my career at The Ritz-Carlton, Palm Beach. Later, I moved to “the city beautiful” where I worked at The Ritz-Carlton, Grande Lakes, and became a Lead Trainer within the pastry department. A few years later, I was recruited to be on the opening team at the Waldorf-Astoria Orlando, where I later became the Pastry Senior Sous Chef. After leaving the property to open Couture Cakes, we still remain the property’s exclusive wedding cake designer. Couture Cakes is currently in its 5th year of business, and we can’t wait to see what the future holds!
What inspired you to make wedding cakes?
In middle school, when asked what I wanted to be when I “grew up”, I would respond that I was going to be “the cake lady”. Growing up in New York, and weekending in the Hamptons, I saw that there was a market for those with specialized talents. From the fashion to the celebrities, to the extravagant galas, I knew that I wanted to work within the luxury market, and knew that the only way to get there would be hard work and dedication.
Do you offer any other desserts?
Absolutely! While wedding cakes are our main line of work, we also offer other tailor-made creations, such as grooms’ cakes, special occasion cakes, cupcakes, and even custom sugar cookie favors, for those looking to enhance their big day with a delectable takeaway!
Which flavors do you offer? What is your most popular?
We offer 25 “Fanciful Flavors” that are expertly paired to entice the palate. In the mood to mix and match? We gladly offer our expertise, in order to create a custom flavor that is perfectly suited for your big day. Our moist cakes are known to taste as good as they look, so when it comes to ingredients, only the finest will do…we guarantee that you’ll taste the difference! All of our cakes, fillings, and buttercreams are made from scratch, with an added pinch of LOVE, for good measure. While we adore all of our offerings, some of our most popular flavors are “Sea Salted Caramel”, “Chocolate Peanut Butter Cup”, and our house speciality “Sunshine State Special”-which is a key lime cake layered with orange blossom cream filling, topped with lemon sunshine spritz buttercream.
Do you have any advice for couples when deciding on their wedding cake and/or desserts?
The most important element when it comes to selecting vendors is that you feel comfortable with them and that you mesh well together, in order to have open communication about how you envision your big day. You want someone that is genuine and reliable so that you have a friend you can count on, even when planning can get a bit hectic.
Secondly, the old quote “you get what you pay for” is definitely a truth when it comes to your wedding cake. While everyone has an “aunt that makes cakes”, trust us, this is one day where it pays to hire the expert!
Lastly, plan ahead…the best bakers typically book out a year or two in advance, so reaching out early will help to secure your date. Here at Couture Cakes, we book a limited number of weddings, on a first-come, first-served basis, in order to create exquisite custom confections, sure to have your guests asking for more!
